Recipe:
-Dashi:
-1000ml water
-20g kombu
-dried mushrooms
-20g bonito flakesPut kombu seaweed and dried mushrooms in water and bring to a boil. When the water is about to boil, turn off the heat and add bonito flakes and simmer for 4 minutes. Then filter everything through a sieve.
If you have dashi no moto powder, you can skip this step.
-Soup:
-1 tbsp sake
-2 tbsp mirin
-3 tbsp soy sauce
-1 tsp sugar
-Pinch of MSG
-Pinch of saltNow add sake, mirin, soy sauce, sugar and salt to your broth. Set aside and keep warm.
Tenkasu (Tempura Bites):
-120g flour
-200ml ice cold water
-1 eggTenkasu are crunchy pieces of deep fried tempura batter / tempura bites.
Mix flour, ice cold water and one egg together. Pass the flour through a sieve. Keep tempura cold in the fridge until ready to use. Use measuring cup or chopsticks and add small drops into the pan and fry at 170°C/340°F. Remove crumbs between every batch of tempura cooking.
Sugar Snap Peas:
-50g sugar snap peas
-1 tsp sesame oil
-1/2 garlic glove
-salt to tasteRinse your peas under cold water and dry them. Marinate them with sesame oil, garlic and salt. Fry them in a pan.
-200g soba noodles
Prepare the soba noodles according to package directions.
-Toppings:
-tenkasu (tempura bits)
-kamaboko
-sugar snap peas
-green onions
